Ingredients

For the Wings:

    • 2 pounds LARGE chicken wings - Air dried overnight in fridge!
    • 1 Scoop Devil Daves Diablo Bloody Mary Seasoning
    • 1 tablespoon corn starch & rice flour (for extra crispiness if deep frying)
    • 1 teaspoon garlic powder

For the Dill Pickle Sauce: Make em' Saucy!

    • 1/2 Cup Devil Daves Pickle Crack - Pickle Hot Sauce
    • 2 T Diced Cold Butter
    • Pinch of Flake Sea Salt - (to taste)
    • 2 T - Crystal Hot Sauce to stretch

Optional Garnish:

    • Chopped fresh dill - Sprinkled while tossing wings of After Plating
    • Dill Pickle Chips - You can even deep fry the sliced pickles! Throw them in just as the wings are almost done - they take about 30 seconds to crisp. Be careful of splatter - Its best to pat the Pickle Chips dry first!

Directions

1. Prepare the Wings

Preheat your oven to 425°F if baking, or heat oil in a deep fryer if you prefer frying. Pat your chicken wings dry with paper towels. Dry wings lead to extra crispiness!

2. Season and Coat

In a large bowl, toss the wings with salt, pepper, garlic powder, and corn starch & rice flour (if deep frying). Meanwhile, In a separate bowl used to toss the cooked wings, add the sauces, diced butter and salt. Don't add the dill yet if planning to. Toss that in at the end.. Set the bowl away from heat.. Keep that butter solid - As the hot wings hit the sauce, the cold butter does something magical! 

3. Cooking Your Wings

    • For Baking: Arrange the wings on a wire rack over a baking sheet. Bake in the preheated oven for 45-50 minutes, turning once halfway through until golden and crispy. Pro Tip: Adding Butter or Spray WILL NOT make them crisp up while baking! The prep of air drying in the fridge overnight is what makes the skin crisp in the oven! Butter sogs the skin when cooking.
    • For Frying: Fry the wings in batches at 375°F for about 10-12 minutes until they turn crispy and reach an internal temperature of 165°F.

4. Toss Them Wings!

Once cooked, transfer the wings to that  bowl containing the Sauce(s), diced cold butter and punch of salt (Pacino refence anyone?). If desired, now toss with freshly chopped dill or parsley for that extra hint of Dill flavor. Remember You want them goopy and saucy - don't be shy with the sauce!
